
Ingredients
- 
2 vegan sausages chopped 
- 
1 large onion, chopped 
- 
1-2 large carrots peeled and chopped 
- 
3 cloves garlic, minced 
- 
2 teaspoons dried oregano 
- 
1/2 cup sun-dried tomatoes, soaked in boiling water for 30 minutes, drained and chopped 
- 
One large can of chopped tomatoes 
- 
Salt and freshly ground black pepper 
- 
6 cups vegetable broth 
- 
1 bunch kale, leaves stripped and chopped 
- 
1 can of red kidney beans drained and rinsed 
- 
1 package of Fauxmagerie Zengarry Creamy Swiss fauxmage 
Instructions
- 
Place all ingredients except the Fauxmagerie Zengarry Creamy Swiss fauxmage in your instant pot. Set to pressure cook for 10 minutes. Relieve the pressure. 
- 
Chop the Fauxmagerie Zengarry Creamy Swiss fauxmage and add to the soup while it’s hot and mix until it’s well combined. 
-
