There are so many reasons to love this recipe.... It's 100% raw and full of live digestive enzymes, vitamins and nutrients in their purest form. It's ready in 5 minutes. Just slice, layer and dig in! It's also incredibly delicious and surprisingly filling.
You can use your favourite pesto recipe or try ours!

Ingredients:
- 
2 zucchinis 
- 
2 ripe tomatoes 
- 
1 pkg. Fauxmagerie Zengarry Sundried Tomato & Basil cashew cheese 
- 
1/2 cup pesto with scapes and spinach (see below for recipe) 
- 
nutritional yeast 
- 
pine nuts for garnish 
Instructions:
- 
Thinly slice the zucchinis using a mandolin. Slice tomatoes. 
- 
Layer zucchini slices, Zengarry Sundried Tomato & Basil cashew cheese, tomatoes, and pesto a couple of times. Finish with zucchini slices and top with pesto. 
- 
Garnish with nutritional yeast and pine nuts, then serve. 
Pesto with Garlic Scapes and Spinach
If you don't have easy access to a vegan pesto, you can use this quick and easy recipe to whip up a homemade version.
Ingredients:
- 
2 handfuls of fresh basil 
- 
2 large handfuls of baby spinach 
- 
3-4 garlic scapes, chopped into 1 inch pieces 
- 
1/3 cup pine nuts 
- 
Juice of 1/2 of a lemon 
- 
1/2 tsp pepper 
- 
1 tsp salt 
- 
1/2 cup olive oil (use cold-pressed if following a raw diet) 
- 
1/4 cup nutritional yeast (optional) 
Instructions:
-
